Will my 2021 baby be eligible for this as well? How do I add them or is it not possible until I file taxes next year?
Also wondering if she is eligible for the $1400 stimulus?

The child tax credit for 2021 does include babies born this year (2021). You should be able to go to the child tax credit update portal, which will let you report any change in status (dependents, income) throughout the year. As for the stimulus that was passed as part of the American Rescue Plan, you will get the $1,400 when you file your income tax return in 2022. Hope that helps!
